Birch Sap (Betula Alba) and Birch Syrup (Betula Surrepo). The Cumberland Delta is home to some of the most pristine Birch forests. We collect sap fresh from the trees in the spring and market it frozen or fresh as well. This sap contains one of the healthiest sugars know to man, it contains 1% xylitol sugar, it has magnesium, manganese, antioxidants, and polyceratids. We dehydrate it into birch sap, it has been praised by indigenous people of the Delta as a spring tonic it replenishes much of the lost vitamins and minerals from the long winters. It is known to reduce cholesterol, increase heart activity and boost energy. The syrup is praised by chefs around the world as a glaze for some of the finer cuts of beef, pork and some seafoods.

We offer bulk orders of sap during the spring harvest, in 2023 we produced 2300 Liters a day, but could easily triple that. Please email us, if you are interested in large quantities of birch sap. We are currently developing a bottled iced tea mix, made from birch sap, and hope to have it available in summer of 2024.
